A will does not have to be notarized. In order for a will to be valid, it must be signed by two subscribing witnesses, which must be in the presence of each other, and in the presence of the testator at the time that they sign. However, in order to have a will that is properly self-proved, which makes it easier to admit to probate, it's important to have that self-proving affidavit attached to the will and have that affidavit notarized.
